Day 2: Seville Royal Alcázar — Andalusian Horse-Drawn Carriage

Begin your introduction to Seville on foot with a private guided walking tour through the city’s historic heart, where centuries of Moorish, Jewish, and Christian influences have shaped its distinctive character. Wander through atmospheric lanes and elegant plazas, discovering hidden courtyards, historic landmarks, and the stories behind Seville’s remarkable architectural and cultural heritage. Along the way, gain a sense of the traditions, neighborhoods, and daily rhythms that make the city so captivating.

Continue on to the magnificent Royal Alcázar of Seville, one of Europe’s oldest royal palaces still in use, arriving with a deeper appreciation for the layers of history surrounding this extraordinary landmark. A masterpiece of Mudéjar architecture, the palace is adorned with intricate tilework, ornate arches, tranquil courtyards, and lush gardens perfumed with orange blossom. Its harmonious blend of Moorish artistry and Christian influence reflects centuries of Andalusian history. (Entrance included.)

Enjoy lunch at a carefully selected local restaurant, with regional specialties and a tasting of Spain’s celebrated Jamón Ibérico de Pata Negra.

Close out the day in timeless Andalusian fashion with a traditional horse-drawn carriage ride. Clip-clop gently through elegant boulevards and palm-lined avenues, beneath orange trees and past grand plazas, historic gardens, and beloved landmarks. Continue on foot afterward for a closer look at charming plazas, hidden corners, and vibrant daily life. The evening is at leisure.

Day 3: Seville Flamenco Artistry & Traditional Andalusian Cuisine

Enjoy a leisurely morning and time to discover Seville at your own rhythm. Wander the atmospheric lanes of Santa Cruz, browse artisan boutiques, or pause in a shaded plaza to observe daily Sevillian life.

For those interested, enjoy an intimate behind-the-scenes look at the artistry of flamenco costume design, discovering the craftsmanship, vibrant colors, and distinctive details behind one of Spain’s most iconic traditions. A visit to Seville Cathedral may also be arranged for those who wish to explore its extraordinary Gothic architecture, layered history, and iconic tower.

The afternoon is yours to explore, perhaps with a walk through the elegant María Luisa Park. This evening, gather for a celebratory dinner featuring traditional Andalusian cuisine and regional wines.

Highlights of Mijas, Grenada & Ronda

Day 4: Sierra de Grazalema & Ronda

Bid farewell to Seville and travel through the breathtaking Sierra de Grazalema Natural Park, a protected biosphere reserve known for rugged mountains, deep gorges, and picturesque whitewashed villages. Pause in one of these charming pueblos blancos for photographs and perhaps a glass of local wine or coffee, embracing the unhurried rhythm of Andalusian life.

Continue toward Ronda and settle into your countryside accommodations, where olive trees, rolling farmland, panoramic views, and understated comfort create a tranquil contrast to the energy of Seville.

Your Andalusian culinary journey now takes center stage as your Expert Host and the local Chef of the Cortija collaborate on dinner, bringing together professional culinary technique, local flavors, and the warmth of shared table traditions.

Day 5: Ronda History, Paella, Wine & Flamenco

Over a leisurely breakfast, take in expansive views of the Serranía mountains before setting out on a private city tour to explore Ronda, one of Andalusia’s most captivating hilltop cities. Discover a landscape and history shaped by Roman, Moorish, and Christian civilizations as you wander its historic streets and landmarks.

Midday brings a convivial culinary experience with your Expert Host: a hands-on workshop devoted to Spain’s iconic paella. From selecting seasonal ingredients to mastering saffron-infused rice and achieving the coveted socarrat, learn techniques that blend professional expertise with regional authenticity. Pair the meal with carefully selected Andalusian wines.

Later, visit a historic vineyard estate in the Ronda countryside for a behind-the-scenes look at local winemaking traditions and a tasting of wines shaped by the unique terroir of the Serranía de Ronda, accompanied by hand-selected tapas.

The evening culminates with an authentic flamenco performance. Guitar, song, and impassioned dance bring centuries of tradition vividly to life, with an opportunity to learn a few spirited steps alongside the performers.

Day 6: Mijas, Puerto Banús & Marbella

Today reveals another facet of Andalusia, where Moorish heritage meets Mediterranean glamour.

Begin in Mijas, one of the region’s beautiful pueblos blancos, perched in the hills above the Mediterranean. Explore its whitewashed streets, artisan boutiques, ceramics studios, and specialty shops while discovering the layers of history that shaped this picturesque community.

Continue to Puerto Banús, a celebrated marina overlooking the Mediterranean, where sleek yachts, waterfront cafés, and designer boutiques create a distinctly cosmopolitan atmosphere.

Lunch will be hosted in a local favorite beach bar in Marbella.

Conclude in Marbella’s historic Old Town. Narrow cobbled streets open into flower-filled plazas, orange trees scent the air, and wrought-iron balconies frame centuries-old façades. Enjoy a special seaside lunch, followed by time to explore Marbella at leisure—from its beaches and galleries to artisan shops and sophisticated boutiques.

Return to the countryside for a relaxed evening.

Day 7: Andalusian Horse & Bull Heritage

The morning unfolds gently in the countryside. Then venture into the Andalusian dehesa for an exclusive, behind-the-scenes look at one of the region’s enduring rural traditions.

Discover the world of the toro bravo—from mother cows and young calves to mature bulls—raised amid ancient holm oaks. Step inside a traditional testing ring and gain insight into the careful breeding and selection practices that have shaped this heritage for generations. Learn as well about the Pura Raza Española horses and the close relationship between horse, bull, land, and the people who care for them.

This is not a bullfight, but rather an opportunity to understand the traditions and rural culture surrounding it from behind the scenes. Following the visit, enjoy a leisurely lunch accompanied by local wines as your hosts share more of the history, customs, and enduring passion that define this corner of Andalusia.

Return to your countryside retreat for an afternoon at leisure. This evening, gather for a farewell culinary collaboration with your Expert Host, celebrating the flavors, camaraderie, and shared experiences of Andalusia.

Highlights of Madrid

Day 8: Madrid

Bid farewell to the sun-drenched landscapes of Andalusia and travel north by high-speed train. Relax into a comfortable journey across the Spanish countryside as the landscape gradually gives way to the Castilian plains.

Upon arrival in Madrid, private transfers escort you to your centrally located accommodations. After time to refresh, begin your introduction to the capital with a walking exploration of Old Madrid.

Through lively plazas and historic streets, discover several longstanding tapas establishments beloved by generations of Madrileños. At each stop, learn the stories behind the dishes, their origins and evolution, and their place in Spain’s culinary heritage. Carefully selected wines accompany the tastings, creating a vibrant introduction to Madrid’s convivial food culture.

The evening concludes at leisure.

Day 9: Madrid — The Royal Treatment

Begin the day with a guided panoramic exploration of Madrid, a capital that blends imperial grandeur with cosmopolitan vitality. Broad boulevards, elegant plazas, and architectural landmarks reveal a city shaped by Habsburg and Bourbon monarchs, yet energized by contemporary art, fashion, and gastronomy.

Enjoy pintxos and a glass of wine before visiting the magnificent Royal Palace of Madrid. Once the official residence of the Spanish Royal Family and now used for state ceremonies, the palace offers opulent salons, grand staircases, exquisite frescoes, and extraordinary collections of art and tapestries — a glimpse into centuries of Spanish monarchy.

The afternoon is at leisure. Explore Madrid independently, perhaps visiting a gourmet market, browsing the elegant shops of Salamanca, or discovering one of the city’s renowned museums. Personalized recommendations and dining reservations can be arranged.

Day 10: Madrid at Leisure & Farewell Dinner

Enjoy a final day in Madrid at your own pace. Browse the elegant shopping district, linger over lunch at a neighborhood café, or choose an optional guided visit to one of the city’s celebrated art museums. A leisurely walk through Retiro Park offers a peaceful contrast to the capital’s grand boulevards and lively streets.

This evening, gather for a farewell dinner featuring Spanish cuisine and wine. Raise a final glass to the landscapes, flavors, traditions, and friendships that have made your journey through Andalusia and Madrid truly memorable.

Day 11: ¡Adiós, Madrid!

Your journey comes to an end this morning. A private transfer will escort you to the airport based upon your departure time. Carry home the flavors, stories, and warm hospitality of Spain—and the memories created around the table along the way.

*Premier Tours & Travel will advise on the group departure window from Madrid as flight schedules are finalized. Private transfers will be charged a supplement.
